If you own a copy of my book Eat Beautiful, you understand that embracing a healthy lifestyle doesn’t have to mean sacrificing taste. Instead of relying on salt and sugar, the real secret to delicious meals lies in harnessing the rich, seasonal flavors available to us. As autumn sets in, one ingredient I absolutely adore is garlic, which I consider the ultimate versatile food. Renowned for its healing properties, garlic becomes especially valuable during the cold and flu season. Garlic contains a potent natural compound known as allicin, which combats harmful bacteria and viruses in the blood. It also helps tackle overgrowth of gut fungi associated with acne and other skin issues. Enriched with antioxidants, garlic boasts antibiotic and antifungal characteristics that purify our blood, bolster our immune system, and enhance circulation. Not to mention, its flavor is absolutely irresistible! One of my favorite, comforting ways to indulge in garlic this season is by creating a roasted garlic spread. This delightful spread is far easier to make than you might think, and once you try it, you’ll be hooked! Pair it with fresh sourdough or incorporate it into various dishes as a delectable alternative to butter. Below, I’m excited to share my incredibly simple recipe for a roasted garlic spread.

Delicious Roasted Garlic Spread Recipe to Elevate Your Dishes
YIELD: 1 ROASTED GARLIC BULB
NUTRITION: 12 CALORIES PER CLOVE
Ingredients: 1 whole garlic bulb
1 tablespoon of high-quality olive oil
- Begin by preheating your oven to 200°C/180°C with a fan setting to prepare for roasting.
- Carefully slice the top off the garlic bulb to expose the individual cloves, then drizzle a generous amount of olive oil over the exposed cloves. Wrap the bulb in aluminum foil, place it on a baking sheet, and let it bake for 40 minutes. After baking, remove it from the oven and allow it to cool.
- Once the garlic bulb has cooled, you can store it in the fridge for future use. To enjoy, simply scoop out the soft roasted garlic from each clove with a knife, or for added ease, just squeeze the roasted cloves to extract the flavorful flesh, which can be used as a delicious buttery spread.
PRO TIP: Although roasted garlic is milder than its raw counterpart, be mindful that working with garlic can leave a strong scent on your hands. To avoid any lingering odors, I recommend not preparing this dish right before heading out for work!
