Every Sunday morning, my mind bombards me with an overwhelming list of tasks. At the top of that list is sharing my stories. Honestly, it’s a toss-up whether I actually follow through. Preparing involves several steps: pondering what content to create, setting up my tripod, considering if I need to wash my hair or apply makeup, and assessing my energy levels. Ironically, the days I do engage with you all truly uplift my spirits and make the effort worthwhile.
Like many, I start my day with a ritual that includes my beloved morning coffee. The first thing I do is head out with my husband and our three dogs to our favorite local café. The dogs indulge in their lactose-free puppychinos, while I savor a long black coffee with a splash of oat milk, setting the tone for a relaxing Sunday.
Our conversations often mirror a back-and-forth tennis match. Each question seems to bounce back and forth endlessly.

To prepare for the week ahead, I prefer shopping at a quaint, upscale grocery store. The thought of navigating through crowded supermarkets is daunting, so I choose the cozy atmosphere of smaller shops.
My grocery list is simple, focusing on fresh fruits and vegetables, yet I often find myself ordering from UberEats multiple times a week. It’s amusing how the shopper and the eater can be two different people altogether.
I typically spend my afternoons preparing dog food and meal prepping for the week. However, my inner 90s girl dreams of enjoying a lively Sunday session, complete with a pitcher of margaritas and dancing by the beach to nostalgic tunes from the 80s and 90s. Instead, we often end up curled up on the couch with our three dogs, debating what to binge-watch on Netflix before heading to bed early.

Here’s a delightful recipe that can be easily adapted to be either vegan or vegetarian. This is a dish I’ve cherished making for over 21 years. Pair it with a refreshing Greek salad for a truly divine Sunday meal.
Gather the following ingredients:
Diced pumpkin
Chopped onion
Filo pastry
Silverbeet (or spinach)
Fresh dill
Feta (or vegan feta)
Parmesan (or vegan parmesan)
Butter (or vegan butter)
A shake of paprika, turmeric, and chili for flavor
Begin by roasting the diced pumpkin and chopped onion in a mixture of chili, paprika, turmeric, and olive oil for approximately 30 minutes, or until the pumpkin reaches a tender consistency. Sauté the silverbeet until wilted, then combine it with the roasted pumpkin mixture along with the feta and parmesan. Carefully mix all the ingredients to create a delicious pie filling. For the base, layer about five sheets of filo pastry brushed with butter, then add the filling and scrunch some filo over the top. Bake in the oven at 160° for 20-30 minutes until golden and crispy.
