Delicious and Nutritious Date Energy Bites Recipe
Yields 10 Energy Bites
Approximately 160 Calories Per Bite
Ingredients:
120g pitted dates
120g dried apple rings
120g unsalted dry-roasted almonds
120g gluten-free rolled oats
1 tbsp maple syrup
1 tsp ground cinnamon
A handful of finely chopped pistachios
- Begin by soaking the dates in hot water for about 10 minutes to soften them. After soaking, drain the dates and gently squeeze them to remove any excess water.
- Next, place the soaked dates into a food processor along with all remaining ingredients except the chopped pistachios. Add a tablespoon of water to the mixture and blend until it achieves a smooth, sticky paste that resembles dough. If the mixture is too thick, feel free to add another tablespoon of water to reach your desired consistency.
- Using clean, wet hands, scoop out tablespoon-sized portions of the mixture and roll them into ten balls. Then, place the finely chopped pistachios in a bowl and roll each ball in the nuts to coat them evenly.
- Store the finished energy bites in an airtight container in either the refrigerator or freezer to maintain freshness.
