I primarily use whole dates to create a paste. This keeps the fiber intact compared to using date syrup or date sugar, which can dry out baked goods. I also prefer using tigernut flour for its nutritional benefits.
Tigernut flour is made from a tuber and is high in prebiotic fiber. It helps balance blood sugar and is a great option for baking due to its naturally sweet flavor profile. It is nut-free and a nutritious alternative to almond flour.
Be aware that tigernut flour can clump. It’s best to work the bag with your hands before opening it or sift it to avoid clumps. I also use sprouted organic oats in some recipes where tigernut flour doesn’t perform as well.

Use any steaming device you have. Add water to the bottom, place dates on top, cover, and heat until boiling. Simmer for 10-15 minutes until dates are soft. Fifteen minutes is often ideal.
Once softened, blend the dates into a paste. I recommend making a large batch and storing it in the fridge for future use. Heat it gently to soften as needed.
If you lack a food processor, a blender will suffice. However, a smaller blender is preferable for better results.
