Delicious Winter Delight: Hearty French Onion Soup Recipe
SERVES 4
245 CALORIES PER SERVING
1 tbsp olive oil
25g butter
700g onions (approximately 5 medium onions), thinly sliced into rings
3 garlic cloves, finely diced
1.2 litres vegetable stock
2 tbsp apple cider vinegar
Sea salt and black pepper
- Begin by heating the olive oil and butter in a large pan over a high flame. Once the butter has melted completely, introduce the thinly sliced onions and garlic into the pan. Sauté for about 5 minutes, or until the onions develop a lovely golden-brown hue.
- Next, reduce the heat to low and allow the mixture to cook slowly, stirring occasionally for roughly 30 minutes. During this time, you should notice a rich, nut-brown, caramelized layer forming at the bottom of the pan, which adds depth to the flavor.
- After the onions are perfectly caramelized, pour in the vegetable stock and apple cider vinegar, stirring well to combine. Be sure to scrape the bottom of the pan to incorporate all the delicious caramelized bits. Bring the mixture to a gentle simmer, then reduce the heat further and let it cook for an additional hour. Before serving, season with sea salt and black pepper to taste.
