Delicious Frozen Banana Lollies Recipe for Summer Enjoyment
Serves 6
Each serving contains 102 calories
Essential Ingredients for Your Lollies
400ml coconut or unsweetened almond milk
2 large bananas, peeled
2 tbsp runny honey
1 tsp vanilla extract
1 tbsp shredded coconut
A handful of ground hazelnuts (or extra shredded coconut), for dipping
- Begin by pouring half of the coconut milk into a food processor. Add the peeled bananas, runny honey, and ½ teaspoon of vanilla extract. Blend until you achieve a smooth consistency.
- In a separate bowl, whisk together the remaining coconut milk and the rest of the vanilla extract until well combined.
- Carefully divide the banana mixture among six lolly moulds, ensuring even distribution.
- Next, layer the coconut mixture on top of the banana layer, then place the moulds in the freezer for a minimum of 6 hours, or until the lollies are completely frozen.
- To remove the lollies from the moulds, dip them in warm water for about 10 seconds. In a deep bowl, pour in the ground hazelnuts or extra shredded coconut, then dip the top 5–8cm of each lolly to coat.
- Finally, return the lollies to the freezer to allow them to set firmly. They’ll be ready to enjoy in just 5 minutes or whenever you crave a refreshing treat!
