Hello, Hex Squad! I am thrilled to share our delightful Frost Meatloaf recipe with you today. This dish holds a special place in Dave’s heart as it embodies the essence of comfort food. For years, we refrained from indulging in meatloaf due to the challenge of finding gluten-free options. Recently, we embarked on a culinary adventure to recreate this classic dish in a gluten-free version that we both could savor and enjoy. One of my favorite aspects of this recipe is its simplicity—it requires only 5 minutes to prepare, making it perfect for busy weeknights!
For this recipe, we usually opt for 90% lean bison or beef, sourced locally and raised without antibiotics, ensuring they are grass-fed and finished. We also incorporate the Force of Nature Regenerative Bison Ancestral Blend, which my dietitian recommends. This blend includes liver, which is essential for my recovery following multiple surgeries, despite my personal aversion to its flavor. Fortunately, this meatloaf cleverly masks the taste of liver, allowing me to benefit from its nutritional properties without the unpleasant flavor!

Essential Ingredients for Frost Meatloaf

Sweet and Tangy Glaze for Ultimate Flavor

Step-by-Step Guide to Crafting the Perfect Frost Meatloaf

- Begin by preheating your oven to 350°F (175°C) to ensure even cooking.
- In a large mixing bowl, thoroughly combine the bison or beef, eggs, gluten-free oats, barbecue sauce, and mustard, ensuring all ingredients are well incorporated for a rich flavor.
- Divide the mixture evenly between two silicone non-stick baking pans, shaping them to your desired loaf size.
- In a separate small bowl, mix the honey and barbecue sauce together to create a tantalizing glaze; divide this mixture in half and pour it generously over both meatloafs.
- Place the pans in the preheated oven and bake for 45 minutes, allowing the flavors to meld beautifully.
- Once done, remove the meatloaf from the oven and allow it to cool for one hour to enhance the flavor and texture.
- Finally, slice and enjoy your homemade Frost Meatloaf!
Honestly, the hardest part of this entire process is the waiting! Allowing the meatloaf to cool for an hour seems like an eternity when you know how delicious it will be.
Why Frost Meatloaf is a Family Favorite

Although I may not be a professional food photographer, I genuinely enjoy sharing the nutritious recipes that Dave and I create together. My journey with a dietitian to improve my gut health has led me to eliminate most artificial sweeteners, along with my previous staples like Quest Bars and Ryse protein powders.
In their place, I now enjoy Aloha Bars, particularly the chocolate caramel pecan variant, which has been recommended for better health. For protein supplementation, I have switched to PB2 Performance Peanut Protein Powder flavored with Madagascar Vanilla. While I find it acceptable, it doesn’t quite match my fondness for the Ryse powders.
Through my journey with GI mapping guided by my dietitian, I discovered an imbalance in my gut bacteria, with harmful bacteria being excessively high and beneficial bacteria alarmingly low. This revelation necessitated significant dietary changes, along with the introduction of supplements to foster gut healing. Although the process is gradual, I am making consistent progress.
In March, I faced the unfortunate loss of my ability to eat garlic, onions, and tomatoes, which was devastating, especially since I already struggled with bell peppers and eggplants. My partnership with the dietitian began in mid-June, and by mid-August, I could start reintroducing small amounts of onions and tomatoes into my diet, although garlic remains off-limits for now. I remain hopeful that within a year, I will regain the ability to enjoy garlic again. Some of the foods prescribed by my dietitian are not to my liking, such as liver, but I must admit they are playing a pivotal role in my healing journey.
I sincerely hope you find joy in preparing the Frost meatloaf recipe; it has become a cherished weekly staple in our household, bringing us comfort and satisfaction.
